Ingredients:
- Pam
- 1 tsp olive oil
- 1/2 lb. beef stew pieces, cut into 3/4” cubes
- 1/4 cup chopped onion
- 1 clove minced garlic
- 2 cups water
- 2 tsp beef bouillon granules (or 1 cup of beef broth that you buy in a can)
- 1/2 (14 1/4 oz) can cut up stewed tomatoes, not drained
- 1 cup peeled, diced sweet potato
- 3/4 cup diced red potato
- 1/2 cup sliced or chopped mushrooms
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/4 tsp salt
- 1/4 cup frozen petite green peas
Cooking Directions:
1. In a pot sprayed with Pam over medium-high heat, add olive oil. When hot, add beef stew pieces, onion & garlic. Cook 4-5 minutes or until done & slightly brown.
2. Add water, beef bouillon granules, tomatoes, sweet potatoes, red potatoes, mushrooms, allspice, cloves, & salt. Bring to a boil.
3. Cover & reduce heat, simmer for 40 minutes or until meat is tender. Add petite peas & cook 2 minutes more.
